
A very quick and delicious pasta dish.
For two.
Olive oil
1 clove garlic, crushed
500g courgettes
50g or so pine nuts, toasted
A few chilli flakes, to taste
Juice of a lemon
Freshly ground black pepper
A handful of grated parmesan
Spaghetti for two (around 225g)
1. Cook the spaghetti until al dente.
2. Meanwhile, coarsely grate the courgettes, then blot dry with kitchen paper.
3. Quick fry the courgettes with the garlic in a hot pan with a little olive oil, add the toasted pine nuts, chilli flakes, lemon juice, plenty of black pepper and fry for a further minute or so.
2. Drain the pasta then return to the pan with the courgettes, and add most of the parmesan.
4. Toss together and serve immediately topped with the remaining parmesan.
